Hearty Lamb Stew

From the Cardigan Kitchen

1 TB olive oil
1 red onion, diced
3 cloves of garlic, minced
1 carrot, diced
4 Yukon gold potatoes, cubed
1 15 oz can diced tomatoes
1 lb stew meat lamb
32 oz beef broth
1/2 tsp Italian seasoning
salt and pepper to taste


Sweet Potato Peanut Soup and Roasted Beet Salad

From the Cardigan Kitchen

4 beets of any variety
2 TB olive oil
salt and pepper to taste
2 oz of goat cheese
1/4 cup balsamic vinaigrette (recipe below)


Sweet Potato Peanut Soup


1 TB olive oil
4 garlic cloves, minced
1 TB ginger, minced
1 red onion, diced
32 oz chicken broth
2 sweet potatoes, cubed
1 tomato, diced
3/4 cup peanut butter (smooth or creamy, I used a mix of both)
1/2 cup tomato paste
1 bunch of kale, stems removed
Hot sauce, to taste

Honey Balsamic Roasted Vegetables

1 zucchini
1 red potato
2 plum tomatoes
3 garlic cloves, sliced
Dash of Cayenne pepper
2 tablespoons olive oil
2  tablespoons honey
1/4 cup of balsamic vinegar (useless if you don’t like things that vinegary)

Cran-Apple-Pear Parfait


2 Red d’anjou pears
2 Pink lady apples
1 cup of fresh cranberries
2 Tbs of butter
3 Tbs of honey (I like a little tartness, you may want more honey)
1 Tbs of lemon juice
2 Tbs of cornstarch
Dash of cinnamon
